| 15 minute French Toast
1/2 cup of soy milk or dairy milk 1 egg 1/4 teaspoon of vanilla 1/4 teaspoon of ground cinnamon 1 teaspoon of sugar, optional 4 slices of multigrain bread 2 teaspoons of vegetable oil
In a shallow pan or bowl, whisk together the milk, egg, vanilla, cinnamon and sugar. Dip the slices of bread into the milk mixture one by one, turning to coat both sides. Heat a lightly oiled, medium skillet on medium heat, and fry the bread until it is lightly browned on both sides. Serve topped with maple syrup, sliced fruit, applesauce or your favorite fruit spread. Makes 2 servings |
