| Marty's Smoked Potato Salad
4 potatoes, peeled 2 onions, peeled and cut in halves 2 tomatoes, seeded and diced 2 scallions, chopped 1/4 cup of olive oil 1/8 cup of red wine vinegar 2 sweet red peppers, roasted, seeded and diced Salt, pepper and oil to taste 2 cups of wood chips |

Boil potatoes until cooked, but still firm. Set aside and cool. Cut into large cubes. Light coals on one side of the grill. When coals are white, add wood chips. When the fire dies down, place the onions on the grill, cut side down, opposite the fire. Smoke for 30 minutes. Remove onions from grill and dice. Gently mix onion and potatoes; add remaining ingredients. Refrigerate and serve with any main course. |
