Mango Bread

1/2 cup of shortening
1 1/2 cup of sugar
2 eggs
1/2 cup of sour cream or evaporated milk
2/3 cup of mashed well-ripened mangoes
(3-5 med. size)
2 cups of all-purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of vanilla
2 1/2 cups of finely chopped cashew nuts

Mix shortening, sugar, and eggs. Add sour cream and mangoes. Mix well. Add flour, baking powder, soda, salt, and vanilla. Mix with electric mixer at medium speed for 2 minutes. Fold in cashew nuts. Pour into 2 greased loaf pans. Bake for 40 minutes to 1 hour at 350ºF.
