| Chicken and Chips
3 tablespoons of butter or chicken fat 3 tablespoons of chopped green pepper 1 tablespoon of minced onion 1/4 cup of flour 1 cup of chicken broth 1 cp of light cream 1/2 teaspoon of salt freshly ground pepper a dash of powdered thyme 2 cups of coarsely crushed potato chips 2 cups of cubed cooked chicken 3 tablespoons of grated Parmesan cheese |

Melt the butter or chicken fat in a saucepan. Add green pepper and onion and cook slowly for several minutes. Blend in flour and slowly add chicken broth and cream. Cook, stirring constantly, until thickened. Add salt, pepper and thyme. Arrange 1 cup of the potato chips in the bottom of a buttered 2 1/2 - 3 quart casserole. Spread 1 cup of the chicken over this, then pour on half the sauce. repeat these layers and sprinkle top with cheese. Bake in 350ºF. oven until bubbly and brown, about 25 minutes. Serves 4 |
