Caviar Topped New Potatoes

Elegant but yet easy!

1/2 pound of small red new potatoes, about 8
3 tablespoons of sour cream half and half or yogurt cheese
1 scallion, finely minced
1 1/2 tablespoons of red lumpfish caviar

Place the potatoes in a medium sized pot of boiling salted water. Boil for 15 minutes or until tender when pierced with a fork. Drain potatoes and cool 5 - 10 minutes. Cut each potato in half. With a small melon baller, scoop about 1/2 teaspoon of potato from center of each potato half and discard. Cool the potatoes to room temperature or chill them. In a small bowl mix the sour half and half and minced scallion. Spoon 1 rounded teaspoon of the half and half mixture onto each potato half. Top each with 1/4 teaspoon of caviar. Makes 4 servings
