Nana's Stove

Beef Stuffed Manicotti

8 ounces of ground beef
1 1/2 cups of yellow onion, finely chopped
One 10 ounce package of frozen spinach, thawed and squeezed dry
2 cloves garlic, minced
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 teaspoon of dried oregano
1/2 teaspoon of basil leaves
1 large egg, lightly beaten
2/3 cup of grated Parmesan cheese
8 ounces of manicotti
4 cups of medium white sauce 

Heat a 12 inch nonstick skillet over moderately high heat. Add the beef and onion and saute for 5 minutes or until browned. Stir in the spinach, garlic, salt, pepper, oregano, and basil and cook, stirring frequently, for 3 minutes or until the liquid has evaporated. Remove from the heat, let stand for 10 minutes, then stir in the egg and 3 tablespoons of the Parmesan. Meanwhile, cook the manicotti according to package directions and make the white sauce. Stir into the sauce all but 1 tablespoon of the remaining Parmesan. Stir 1 cup of the sauce into the meat mixture. Preheat your oven to 375ºF. Lightly grease a 13 x 9 x 2 inch baking pan. Using a small spoon, stuff the manicotti with the meat mixture and arrange in a single layer in the pan. Pour on the remaining sauce, sprinkle with reserved Parmesan. Cover with foil, bake for 30 minutes or until bubbly. Uncover, turn the oven to broil and broil 4 inches from the heat for 5 minutes or until browned. Makes 6 servings.
