Agua de Jamaica
Sorrel Flower Water

4 ounces of dried Flor de Jamaica( sorrel flowers)
9 cups of water, divided
1/2 cup of superfine sugar

Wash  the flowers in a strainer under cold running water. Place them in a saucepan with half the water and simmer for 5 minutes. Cool and strain into a jug. Put the sugar in a saucepan with 8 tablespoons of the remaining water and simmer for 3 minutes or until the sugar has dissolved. Add it to the jug, Add the remaining water and chill until required. Serves 8
