Nana's Stove

Southern Styled Roasted Turkey

1 cup of cooked ham, diced
1 cup of onion, chopped
1 teaspoon of poultry seasonings
1/2 teaspoon of sage
2 tablespoons of butter or margarine
two 10 1/2 ounce cans of chicken or chicken giblet gravy
4 cups of dry bread crumbs
2 cups of coarse cornbread crumbs
1 egg, slightly beaten
1/2 cup of raisins
one 10 pound turkey, cleaned and dressed

Brown the ham, onion, poultry seasoning and sage in butter in saucepan until the onion is tender. Add 1/2 cup of gravy.

Toss lightly with bread cubs, cornbread crumbs, egg, and raisins. Fill body and neck cavities of turkey with stuffing, secure with skewers. Fasten legs by tying with string. Tuck wings behind shoulders.

Place in roasting pan and cover loosely with foil. Roast in preheated 325ºF.  oven for 4 hours, allowing 25 minutes per pound or until internal temperature reaches 185ºF. and leg moves easily. Uncover during last hour to brown, basting occasionally.

Remove turkey from pan. Spoon off fat, saving 6 tablespoons of drippings. On top of range, in roasting pan, combine the remaining gravy and drippings. Heat, stirring to loosen browned bits. Serve with turkey & stuffing. Serves 8 - 10
