Roast Turkey with Curried Mushroom Dressing

1 cleaned fresh turkey, weighing 5 - 6 pounds
salt
pepper
1/4 cup of melted butter or margarine
Curried Mushroom Dressing (recipe follows)

Rub the inside of turkey with salt and pepper. Tie legs and wings to body with cord. Place the bird, breast side down, on rack in roasting pan. Brush evenly with melted butter. Roast in preheated 325ºF.  oven for 1 3/4 hours or until leg meat feels soft when tested with fingers. Let the turkey stand for 10 minutes before carving. 

Curried Mushroom Dressing

one 6 ounce bag of seasoned dressing (stuffing) mix
1/2 cup of melted butter
1/4 cup of onion, chopped
1/4 cup of celery, chopped
1/2 cup of sliced mushrooms
1/4 - 1/2 teaspoon of curry powder
3/4 cup of water
frozen chopped chives, for garnish

Combine all ingredients in mixing bowl, toss thoroughly but lightly. Gently press into greased 1 1/2 quart mold. Bake in preheated 325ºF.  oven for 35 - 40 minutes. Unmold and garnish with chives to serve. Serves 4 - 6
