Turkey Roast w/Prune Stuffing

1 boneless turkey roast, about 3  - 4 pounds
1/2 cup of butter or margarine
1 cup of celery, minced
one 6 ounce bag of cornbread stuffing
1 tablespoon of frozen or freeze dried chopped chives
1 1/2 cups of plumped California prunes
1/2 cup of liquid from plumped prunes 

Prepare the turkey roast according to package directions. Melt 2 tablespoons of butter in skillet. Add celery and cook until transparent. Place the cornbread stuffing in a large bowl; add chives and cooked celery. Pit plumped prunes and chop coarsely. Add to dressing mixture with liquid from plumped prunes. Melt the remaining butter and pour over dressing mixture. Mix well. Place the dressing on double thickness of aluminum foil; wrap. Place dressing in preheated 325ºF.  oven for 1 hour before turkey is finished roasting. Remove dressing with turkey roast. Scoop into balls and serve around roast. Serves 6 - 8
