Mix 2/3 cup flour, 1/2 teaspoon of salt, paprika, 1/4 teaspoon of pepper on plate. Beat the eggs in the second plate. Coat the steaks with the flour mixture, then egg, then the flour mixture. Chill on a wire rack for 20 minutes. Heat the oil in a nonstick skillet. Add beef, sauté for 2 minutes on each side. Remove the beef. Leave 3 tablespoons of fat in skillet, stir in 1 tablespoon of flour to make the paste. Add the Worcestershire, mushrooms, milk, simmer for 3 minutes to thicken. Add the remaining salt and pepper. Spoon sauce over the beef. Garnish. Makes 4 servings |
