| Cantaloupe & Prosciutto Salad 3 cups of cantaloupe, cut into 1 inch cubes 8 ounces of prosciutto, thinly sliced 2 tablespoons of key lime juice 6 tablespoons of fresh mint chopped 2 tablespoons of mayonnaise Cut the prosciutto into thin strips. Add the remaining ingredients to the prosciutto. Chill for 2 hours before serving. Serves 4 |
