Mashed Potatoes and Rutabagas


Mashed Potatoes and Rutabagas

3 pounds of rutabaga, peeled and cut into 2 inch pieces
2 1/2 pounds of potatoes, peeled and cut into 2 inch pieces, about 5 or 6 medium
2 tablespoons of butter
2/3 cup of milk
1/4 teaspoon of pepper
1/4 to 1/2 teaspoon of nutmeg
2 teaspoons of chopped parsley  

 

Instructions:

Cook the rutabaga and potatoes in salted water in separate pots (rutabaga will take about 30 minutes; potatoes about 25 minutes). Drain; puree or mash rutabaga well, then mash potatoes. Combine the mashed rutabaga and potatoes; add butter, milk, pepper, and nutmeg. Beat well. Taste and add more salt/seasoning if necessary. Garnish with chopped parsley. Serves about 8.
