Asparagus Au Gratin 1

3 pounds of fresh Asparagus
2 tablespoons of butter or margarine
1 tablespoon of flour
1/2 teaspoon of salt
1 cup of light Cream
1/2 cup of Swiss Cheese, grated
Toasted Bread Crumbs

Preheat oven to 400ºF.  If using fresh asparagus, trim spears evenly and peel to remove scales. Cook 10 minutes or until tender. Drain well. Melt butter in small pan, add flour and cook over low heat until golden. Remove from heat. Stir in salt and cream. Return to heat and stir constantly with wooden spoon until mixture bubbles. Cook 1 minute longer. Add cheese. Stir until cheese melts. Arrange asparagus in shallow baking dish. Spoon sauce over this. Sprinkle with bread crumbs and bake 15 minutes or until lightly browned. Serves 4 to 6

Asparagus Au Gratin 2

1 1/2 pounds of asparagus, trimmed and cooked, reserve 1/2 cup liquid
3 tablespoons of butter or margarine
2 tablespoons of all purpose flour
1/2 cup of asparagus cooking water
1/4 cup of heavy cream
salt and pepper
1/4 cup of grated Parmesan cheese
2 tablespoons of fine dry bread crumbs

Arrange asparagus in greased small shallow broiler proof baking dish. Melt butter in small saucepan and blend in flour. Add reserved liquid to cream. Cook, stirring, until thickened. Season to taste with salt and pepper and pour over asparagus. Sprinkle with cheese, then with crumbs. Put under broiler about 8 inches from heat and watch closely until golden brown. Makes 4 servings
