Spain Cauliflower in Hot Vinegar
Colifloral ajo arriero

1 small cauliflower
2 tablespoons of olive oil
2 cloves garlic
1 teaspoon of paprika
2 tablespoons of wine vinegar
2 tablespoons of cooking liquid from the cauliflower

Wash the cauliflower and cut into flowerets. Simmer the cauliflower in plenty of boiling salted water for 10minutes until nearly tender. Drain the cauliflower and reserve 2 tablespoons of the cooking liquid. In the meantime,  heat the oil in a small saucepan. fry the garlic cloves until lightly browned. Discard the garlic. Remove the saucepan from heat and stir in the paprika, wine vinegar and cooking liquid. Place the cauliflower in casserole. Pour the sauce over the cauliflower. Cover and simmer over low heat for 5  - 10 minutes.
