Quail Pie

6 quail, cleaned
Salt and pepper to taste
3 tablespoon s of cornstarch
1 recipe biscuits  

Place the quail in a saucepan and cover with 3 cups of water. Season with salt and pepper. Simmer until tender. Remove the quail from broth and cool, then remove the meat from bones. Mix the cornstarch with a small amount of water and stir into the broth. Bring to a boil, then reduce the heat and simmer, stirring constantly, until the broth is thickened. Add the quail meat and turn into a baking dish. Top with the biscuits. Bake at 450ºF.  for 12 minutes or until the biscuits are browned. Makes 6 servings
